In the East, residents simply had to cook candied fruit - it was convenient in order to preserve as much fruit as possible - after all, these countries have a hot climate. In Europe, candied fruits were a curiosity - they were brought by Asian merchants, and they were expensive, and only kings and nobles could buy them.
